Subject - Organic Chemistry

In organic chemistry, hydrates are defined as geminal diols generated by addition of water to the carbonyl group of aldehydes or ketones.

Subject - Inorganic Chemistry

In inorganic chemistry, hydrates are defined as solid or liquid molecular compounds in which water is one of the components and in which the two OH bonds in each molecule stay intact. Crystalline hydrates contain the crystallization water in stoichiometric amounts, for example in gypsum (calcium sulfate dihydrate, CaSO4·2H2O).
