Gelatine (or gelatin) is a mixture of proteins derived by hydrolysis from collagen of the skin and bones of pigs and cattle. It contains polypeptides with a molar mass of 13,500 to 500,000 gmol-1. By forming hydrogen bonds, gelatine forms hydrogels. Only 0.6% of this material is already sufficient to form solid gels.
